To take a high-dynamic range (HDR) photo, I set my Canon to shot three photos. The first is exposed as the camera feels is correct, and then one photo that is under exposed and one that is over exposed. I use the Photomatix plugin for Apple's Aperture software to merge them into a single photo that shows more details in the highlights and shadows of the photo.
